How Should Ergonomics Be in Kitchen Design?

Kitchen is one of the most important living spaces in residences. The kitchen is an interior where meals are prepared, meals are eaten, sometimes guests are entertained, family members chat and have a pleasant time. In other words, the kitchen is a space that has different purposes other than cooking, which is its main function, and eating the dishes.

Failure to properly design the kitchen can result in loss of time, some physical health problems, low productivity, dissatisfaction, and so on. The functionality of the kitchen design is proportional to its being ergonomic in a way.

Although the ergonomics researches conducted in relation to the kitchen constitute a very wide scope, they are generally gathered under three focal points.
The actions that take place within the working triangle are cooking, preparation, and storage. This area should not exceed approximately seven meters. This distance between sink, cooker and refrigerator is important. For example, the Department of Environmental Research of the British Ministry of Environment gives these values as 3.6 m and 6 m; It also limits the distance between the sink and the cooker to 1.2-1.8 m. The action sequence is from left to right for right-handed users and from right to left for left-handed users. In the kitchen, access should be provided in this triangle and the working area should also be left.

The tools that will be used most should be at height, and large and heavy pans should be close to the work area under the counter. Rail cabinets and drawers provide quick access. It also provides a wider area for storage capacity.

The non-functional areas at the end of the counter can be used as storage space. Space saving can be achieved by hanging tools such as pots and pans.

Storage is arranged as perishable foods and durable foods. There is no special area for storage in today’s kitchens, but storage is made using rail systems. Pantry systems, which can be pulled out in tall or upper cabinets, and steel baskets ensure the regular placement of supplies.

The location of devices such as refrigerators and freezers is important for the storage of fresh food. The refrigerator should be located near the entrance to the kitchen and at the counter. The stove and oven should be away from the window.
Washing is the basin in the activity area. It is easily accessible and washing activities should be done easily. Dishwasher location is also extremely important. For right-handers, the dishwasher should be on the left, near the sink. For left-handers, it should be on the right. In order for the dishwasher to be loaded and unloaded easily, there should be at least 105 cm distance between the counter and the door.

The most important factor in the preparation activity area is the bench. A durable worktop material and easy-to-clean cutting board provide functionality. Food should be prepared in the long section of the counter and the sink and stove should be close. There should be a distance of 60 cm between the hob and the sink.

Oven and stove are used in cooking. The furnace should be designed 5 cm below the working area. It should be placed on the bench and its distance from the wall should not be less than 30 cm. For ventilation, the distance between the hood and the counter should be 60-65 cm. In terms of security, it should not be a place that is very busy. The location of the oven and hob should be away from the doorway. In families with children, a stove cover should be used. In order for the hoods to work efficiently, they must be at a height of 60-80 cm from the furnace and have the power to draw a minimum of 200-350 m3 of air.

In the designs to be made, attention is paid to ergonomic factors. Although no application is haphazard, it is solved in accordance with the anatomical and ergonomic structure of the person. Reinforcement elements are designed and applied in line with these dimensions. The aim here should be that the individual can perform their kitchen activities without difficulty.
